Pineapple Duck A La Theresa Shea - cooking recipe

Ingredients
    1 duckling (3 lb.)
    2 c. boiling water
    2 Tbsp. soy sauce
    salt and pepper to taste
    1 (20 oz.) can pineapple chunks
Preparation
    Cut duckling into serving pieces.
    Place in a large wok and cover with boiling water.
    Simmer, covered, until almost tender (about 1 hour).
    Skim off fat.
    Stir in salt, pepper, soy sauce and pineapple with syrup.
    Cook 30 minutes or until duckling is done.
    Serves 4.
