Cider French Dressing - cooking recipe

Ingredients
    1/2 large carrot
    1/2 large tomato
    apple cider
    2 Tbsp. cider vinegar
    1 tsp. Dijon mustard
    1/2 tsp. salt
    1/4 tsp. ground black pepper
    1/3 c. olive oil
    grated carrot
Preparation
    In food processor, with chopping blade, process carrot and tomato until finely chopped.
    Strain vegetables through sieve over a 1 cup measuring cup, pressing with back of spoon firmly to extract as much liquid as possible; discard vegetables.
    Add enough apple cider to make 1/2 cup liquid.
