Chocolate Zucchini Cake - cooking recipe

2 c. unsifted all-purpose flour
1 tsp. baking powder
1 tsp. soda
1/4 tsp. salt
1 tsp. cinnamon
1/4 c. cocoa
3 eggs
1 1/2 c. granulated sugar
1/2 c. salad oil
3/4 c. buttermilk
2 c. raw zucchini, coarsely grated
1 tsp. vanilla
1 c. chopped nuts
1 c. raisins
confectioners sugar
Preparation

Sift flour with baking powder, soda, salt, cinnamon and cocoa; set aside. In large bowl at high speed, beat eggs until very light and fluffy. Gradually beat in granulated sugar until very fluffy and light in color. Gradually beat in oil. With mixer at low speed, beat in flour mixture, alternately with buttermilk. Drain zucchini well; fold into flour mixture along with vanilla, nuts and raisins. Turn into greased and floured 10-inch Bundt cake pan. Bake at 350\u00b0 for 55 to 60 minutes. Cool in pan on wire rack 10 minutes. Turn out; sprinkle with confectioners sugar.
