Red Bean Gumbo - cooking recipe

Ingredients
    1/2 c. olive oil
    1 c. flour
    3 c. chopped onion
    2 c. chopped bell pepper
    1 c. chopped green onion
    1 c. chopped parsley
    garlic to taste
    salt and pepper to taste
    3 c. water
    2 cans pintos or red beans
    2 lb. sausage
    3 cooked and diced chicken breasts
Preparation
    Stir olive oil and flour on low fire for 45 minutes to 1 hour. Wait until it is a chocolate brown color, then add chopped onion, bell pepper, green onion and parsley.
    Sprinkle garlic, salt and pepper to taste.
    Then add water, pintos, sausage and chicken. Serve over rice.
