Rice And Zucchini Casserole Or The Serendipity Casserole - cooking recipe
Ingredients

2 c. rich homemade chicken stock or Swanson's jarred chicken broth
1 c. long grain white rice
4 c. thinly sliced zucchini
2 or 3 Tbsp. butter or margarine
Preparation
-
Cook rice using the chicken broth for liquid.
Saute the sliced zucchini in the butter or margarine.
Combine the zucchini and rice.
Season with salt and pepper.
Serve.
You may vary amounts used depending upon the number of people being served.
