Great South Bay Crab Bisque - cooking recipe

Ingredients
    1 to 2 doz. blue claw crabs, about 2 c. cooked crabmeat, picked over
    4 c. milk
    2 tsp. butter
    2 tsp. flour
    2 hard-boiled eggs
    1/2 c. cream or half and half
    1/3 c. sherry
    dash of pepper
    dash of nutmeg
Preparation
    Steam live crabs 15 to 20 minutes.
    Cool and pick out crabmeat.
    Melt butter, add flour.
    Add milk and bring to simmer. Cook until a little thick.
    Chop eggs, add with crabmeat.
    Simmer a few minutes (3 to 5).
    Add remaining ingredients.
    Bring to simmer and serve.
    Yields about 6 servings.
