Shrimp Or Scallop Scampi Genovese - cooking recipe

Ingredients
    1 1/4 lb. uncooked shrimp or scallops
    1/3 c. olive oil
    4 oz. tomato sauce
    3 Tbsp. fresh parsley, chopped
    1 bay leaf
    3 or 4 cloves garlic, chopped
    1/4 tsp. salt
    1/4 tsp. pepper
    1 lb. angel hair or thin spaghetti
Preparation
    Shell and devein shrimp.
    If scallops are large, cut in half. Begin heating the water and plan to have the pasta ready when the scampi is finished.
    Heat olive oil in a large frying pan over medium heat.
    Add the chopped garlic and saute lightly until slightly golden.
    Add the tomato sauce, parsley, bay leaf, salt and pepper.
    Simmer for 5 minutes.
    Add the shrimp or scallops and simmer for 6 to 8 minutes or until cooked.
    Do not over cook or they will be tough.
    Serve over the pasta.
    Serves 4.
