Seafood Roll-Ups - cooking recipe

Ingredients
    1 lb. flounder or sole
    1/2 c. shredded Swiss cheese
    1 (2 1/2 oz.) jar sliced mushrooms, drained
    1/4 c. low-fat yogurt
    1 Tbsp. chives
    1 Tbsp. chopped pimento
    1/2 tsp. salt
    1/8 tsp. pepper
    2 Tbsp. bread crumbs
    1/4 tsp. paprika
    1 Tbsp. plain low-fat yogurt
Preparation
    Thaw fish, if frozen.
    Cut fish into 4 portions.
    Make 4 rectangles.
    In a bowl, combine cheese, chives, pimento, salt and pepper. Spread the mixture on the fish. Roll up fillets around filling.
    Place seam side down in a loaf pan that has been sprayed with nonstick vegetable spray.
    Combine the bread crumbs and paprika.
    Brush fish with the 1 tablespoon yogurt and sprinkle with the bread crumb mixture. Bake in a 350\u00b0 oven for 20 to 30 minutes or until the fish flakes easily when tested with a fork.
