Beef And Eggplant Supper - cooking recipe

Ingredients
    1 lb. ground beef
    1/4 c. oil + 2 Tbsp. butter
    3/4 c. chopped onion
    1 clove garlic
    1 small eggplant, cubed
    2 c. cooked macaroni
    2 c. canned tomatoes
    1/4 tsp. oregano
    1/4 tsp. thyme
    1/4 to 1/2 tsp. salt
    dash of pepper
    1 c. shredded Monterey Jack cheese
Preparation
    Cook ground beef in large skillet until browned, stirring often to crumble.
    Drain off fat.
    Remove meat and set aside.
