Chicken Dijon #1 - cooking recipe
Ingredients

4 boneless breasts of chicken, breaded
1 Tbsp. Dijon mustard
1/2 c. olive oil
1 tsp. chopped fresh tarragon
2 Tbsp. flour
1/2 lb. sliced mushrooms
3/4 can chicken stock
pinch of white pepper
2 cloves garlic, minced
2 green onions, sliced
1 to 1 1/2 c. white wine
Preparation

Heat olive oil in saute pan over medium-high heat.
When hot, add chicken and brown on both sides.
Also add garlic and green onion (don't burn garlic).
When chicken is browned, lower heat to medium and then add flour to oil in pan and mix.
(Tilt the pan to expose oil.)
This makes the roux.
