Carrot Cake - cooking recipe
Ingredients

2 c. sugar
4 eggs
2 tsp. soda
2 tsp. cinnamon
1 1/2 c. oil
2 c. flour
1 tsp. salt
3 c. raw carrots, grated
1 (4 oz.) can black walnuts (optional)
Preparation

Cream sugar and oil.
Add eggs, beaten well.
Sift flour, soda, salt and cinnamon together.
Add to mixture and mix well.
Add carrots and nuts.
Mix well.
Bake in loaf or tube pan 1 hour and 10 minutes at 350\u00b0 or in three 8-inch layer pans for 35 to 40 minutes or until done.
Cool and frost with Cream Cheese Icing. This cake also is good as a pound cake without icing.
