Cajun Style Beans, Rice And Ham - cooking recipe
Ingredients

1 (48 oz.) jar Randall's pinto beans
5 Tbsp. butter or margarine
1 c. chopped onion
1/2 c. chopped green pepper
1 c. chopped green onion
1 tsp. finely minced garlic
1 tsp. salt
1/2 tsp. black pepper
2 bay leaves
1/4 tsp. dry basil
1/4 tsp. hot red pepper sauce
3 c. chicken broth
3 c. cubed smoked ham
6 to 8 c. cooked long grain rice
Preparation

In large pot, melt margarine.
Add onion, 1/2 cup of the green onion, green pepper and garlic.
Cook about 5 minutes until soft, stirring frequently.
Add chicken broth, beans, salt, pepper, bay leaves, basil, hot sauce and ham.
Simmer 30 to 45 minutes, stirring often.
At end of cooking time, mash some of the softest beans against the side of pan to form a thick sauce.
