Cream Of Broccoli Soup - cooking recipe

9 oz. chopped broccoli
2 oz. chopped onion
1 bay leaf
1 3/4 qt. chicken stock
2 1/2 oz. butter
2 1/2 oz. flour
1 pt. hot milk
1 c. cream
Preparation

Heat the stock.
Add the broccoli, onion and bay leaf.
Simmer 1 hour.
Combine the flour and butter to make a roux.
Cook 8 to 10 minutes, stirring occasionally.
Whip the roux into the stock until it is thickened and smooth.
Simmer 1/2 hour.
Put the mixture through a food mill and add the hot milk and cream. Season with the salt and pepper.
Serve it hot with croutons.
Any vegetable can be used instead of broccoli.
Makes 12 (8 ounce) portions.
