Stuffed Zucchini Squash - cooking recipe

Ingredients
    6 medium sliced zucchini
    3 c. soft bread crumbs
    1/2 c. Parmesan cheese
    1 small onion, minced
    3 Tbsp. minced parsley
    1 Tbsp. salt
    1/8 Tbsp. pepper
    2 eggs, beaten
    2 Tbsp. butter
Preparation
    Wash zucchini, cut off ends, do not pare.
    Cook zucchini in boiling salted water 5 minutes.
    Halve zucchini lengthwise, remove pulp with spoon.
    Save shells.
    Combine pulp with bread crumbs, Parmesan cheese, onion, parsley, salt, pepper and eggs.
    Mix well. Fill zucchini shells with this mixture. Dot with butter and sprinkle with additional Parmesan.
    Bake in a 350\u00b0 oven for 30 minutes.
    Yields 6 servings.
