Stuffed Bell Peppers - cooking recipe
Ingredients

2 lb. shrimp
1 bunch shallots
2 cans tomato paste
1 slice bread
1/4 c. Wesson oil
4 bell peppers, halved
2 large onions
2 cans tomato sauce
1 clove garlic
salt and pepper
Preparation

Grind together shrimp, shallots, 1 onion, bread and garlic; mix well.
Add salt and pepper; stuff into pepper halves.
Brown the stuffed pepper halves in heated Wesson oil and remove.
Chop remaining onion very fine and saute in same oil.
Add tomato paste and cook, stirring constantly, unti brick color.
Add tomato sauce and 2 cans of water.
Blend together thoroughly; add pepper halves and simmer gently for at least 1 1/2 hours.
Serve over steaming rice.

8 servings.
