Zucchini Casserole - cooking recipe

Ingredients
    6 c. sliced zucchini
    1/2 c. chopped onion
    1 c. shredded carrots
    1 can cream of mushroom soup
    1 c. sour cream
    1 or 2 pkg. Stove Top stuffing mix
    1/2 to 1 c. margarine, melted
Preparation
    Cover zucchini, onion and carrots with water and boil a few minutes; drain.
    Mix together soup and sour cream; mix with vegetables.
    (If using a 9 x 13-inch pan, prepare 2 packages stuffing mix with 1 cup margarine.)
    Mix stuffing and margarine. Put one half of stuffing mixture in the bottom of a buttered casserole.
    Add vegetable mixture.
    Top with remaining stuffing mixture.
    Bake at 350\u00b0 for 45 minutes.
