Chicken Artichoke Casserole - cooking recipe
Ingredients

1 24 oz. jar marinated artichokes
4 c. diced cooked chicken breasts
2 c. cream of chicken soup
1/2 c. milk
1 c. mayonnaise
1 tsp. lemon juice
1/2 tsp. curry powder
1 1/4 c. grated cheese (divided)
1/2 lb. mushrooms, sliced
2 c. cooked rice
1/4 c. seasoned bread crumbs
2 Tbsp. melted butter
parmesan cheese
Preparation

Drain artichokes.
Place in greased 9 x 13 dish.
Layer rice and chicken over artichokes. Mix soup, milk, mayonnaise, lemon juice, curry and 3/4 of cheese together.
Pour over chicken and sprinkle with remaining cheese.
Toast bread crumbs in melted butter, toss with parmesan cheese and sprinkle on top of casserole.
Bake 350 for 35 minutes.
Serves 8 - 10.
