Country Fried Potatoes - cooking recipe
Ingredients

4 potatoes (2 per person)
1 medium onion
1/4 c. oil (low cholesterol)
Preparation

Peel and thinly slice potatoes and onion.
Heat oil in large skillet.
Add onion over potatoes to hot oil.
Brown, but do not burn.
Reduce heat to low and cover skillet.
Cook approximately 10 minutes.
Remove lid and return heat to high.
Cook 1 or 2 more minutes.
Drain on paper towels before serving.
Serves 2.
