Basic Pralines By Harry - cooking recipe

Ingredients
    3/4 c. firmly packed brown sugar
    1/4 c. plus 2 Tbsp. butter or margarine
    1/2 c. milk
    1 1/2 c. finely chopped pecans
    1 1/2 c. sugar
Preparation
    Lightly coat wax paper with vegetable cooking spray.
    Combine sugars, butter, milk and chopped pecans in a heavy 3-quart saucepan.
    Bring to a boil over medium heat, stirring constantly. Boil uncovered 1 to 2 minutes, stirring constantly or until candy thermometer reaches 220\u00b0.
    Remove saucepan from heat and beat 4 to 6 minutes with a wooden spoon or just until mixture begins to thicken.
    Working rapidly, drop by tablespoon onto prepared wax paper.
    Let stand until firm.
    Yield:
    2 1/2 dozen.
