South American Chicken And Rice - cooking recipe

Ingredients
    1 c. raw rice (not Minute rice)
    1 c. chopped onion
    1 c. chopped celery
    1/2 c. sliced green stuffed olives
    1 clove garlic, chopped
    2 1/2 c. chicken broth
    1 1/2 c. cooked, diced chicken
    1/4 c. olive oil
    salt and pepper to taste
    mushrooms (optional)
    1 c. cooked peas
Preparation
    Heat oil.
    Put rice, onion, celery and garlic in hot oil; keep turning.
    Add remaining ingredients, except peas.
    Put into covered roaster and cook for 1 hour and 15 minutes in a 300\u00b0 oven.
    When done, add peas on top.
    Serves four.
    Serve with salad.
