Zucchini And Tomatoes - cooking recipe
Ingredients

3 large zucchini or 6 small
1 (2 lb. 3 oz.) can tomatoes
2 onions, finely chopped
1 clove garlic, finely minced
olive oil
oregano flakes
Parmesan cheese, grated
Preparation

Wash zucchini and slice thinly.
Set aside.
Saute onions and garlic in olive oil; be careful not to burn.
Add zucchini and cover.
Stir occasionally to prevent zucchini from sticking; cook until soft.
Discard water that has collected in pot from zucchini.
Add tomatoes and oregano to taste.
Stir and simmer gently until done.
Serve with grated Parmesan cheese sprinkled on top.
Makes 4 servings.
