Chicken Chasseurs - cooking recipe

Ingredients
    1 (2 1/2 lb.) ready-to-cook broiler, cut up or filets of chicken
    seasoned flour
    3 Tbsp. butter or margarine
    4 chopped scallions or small onions
    1/4 lb. chopped mushrooms
    1 tsp. sugar
    1 tsp. salt
    2 Tbsp. fresh, frozen or canned lemon juice
    1 c. apple juice or 1 c. chicken broth
    2 diced tomatoes
    2 Tbsp. snipped parsley
    2 Tbsp. snipped chives
Preparation
    Coat chicken with seasoned flour.
    In hot butter or margarine in a large skillet, saute chicken until golden on all sides.
    Add scallions, mushrooms, sugar, salt, lemon juice, apple juice or chicken broth (according to taste preference) and tomatoes.
    Cook slowly, covered, for 45 minutes or until chicken is fork-tender. Sprinkle with parsley and chives.
    Makes 3 to 4 servings.
