Potato Salad - cooking recipe
Ingredients

5 lb. small potatoes
1 stalk celery, finely chopped
1 Tbsp. chopped olives (green)
2 onions
1 1/2 to 2 c. mayonnaise
1 tsp. mustard
pinch of oregano
paprika
4 boiled eggs
salt and pepper
2 Tbsp. sweet relish and/or dill relish
Preparation

Peel and dice potatoes.
Boil the potatoes until done.
Chop celery, olives and onions.
Add pinch of oregano, teaspoon of mustard and the 4 boiled eggs (chopped) to celery, olives and onions.
Add mayonnaise and relish to mixture.
Set small bowl of potatoes to side.
Add ingredients to other potatoes and stir well.
Mash small bowl of potatoes until smooth and add to mixture.
Stir well.
Sprinkle paprika over potato salad.
Serve hot or cold.
Serves 8 to 12 people.
