Chicken Cordon Bleu - cooking recipe

4 chicken breasts, halved, skinned and boned
4 thin slices Swiss or Gruyere cheese
1/2 c. flour
1/4 tsp. ground pepper
1 c. dry Italian bread crumbs
4 thin slices, cooked, smoked ham
1/2 tsp. salt
2 eggs
1/2 c. oil
Preparation

Using a heavy cleaver or meat mallet, flatten each breast half to about a 1/4-inch thickness.
Place one slice of ham and one slice of cheese on each breast.
Beginning at narrow end, roll up and press meat firmly together.
Secure with toothpicks.
