Black-Eyed Peas - cooking recipe

Ingredients
    1 lb. dried black-eyed peas
    1/4 lb. salt pork or smoked ham trimmings
    1 onion, chopped
    1/8 tsp. crushed red pepper
    1 tsp. salt
    1/8 tsp. black pepper
Preparation
    Wash peas, cover with water and soak overnight.
    Drain and put peas and all ingredients into a large pot.
    Cover with water and put lid on pot.
    Bring slowly to a boil and simmer until tender. Cooked rice may be added to the peas before serving.
