Zucchini With A Difference - cooking recipe

Ingredients
    4 medium zucchini
    1 tsp. salt
    1 Tbsp. butter or oleo
    1/4 c. green onions, sliced (4 to 6 onions)
    1 Tbsp. fresh or 1/2 tsp. dried basil
    1/2 c. fat-free sour cream
Preparation
    Grate zucchini on coarsest side of grater into large colander. Sprinkle with salt.
    Let stand 5 minutes.
    Press out as much liquid as possible.
    Spray skillet and melt butter.
    Add green onions. Cook and stir 1 minute.
    Add zucchini.
    (If using dry basil, add it now.)
    Cook until just tender 5 minutes.
    Remove from heat and stir in sour cream.
    (If using fresh basil, stir it in with sour cream.) Serves 4.
