Endive And Blue Cheese Salad(Makes 4 Servings) - cooking recipe

Ingredients
    2 Belgian endive (about 1/2 lb.)
    1 Tbsp. red wine vinegar
    1/2 tsp. salt
    1/8 tsp. pepper
    3 Tbsp. olive oil
    2 oz. Blue cheese (about 1/2 c.), crumbled
    2 Tbsp. chopped red onion
Preparation
    Trim the endive and separate into leaves.
    In a small jar, shake together the vinegar, salt and pepper until the salt dissolves.
    Add the oil and shake again to combine.
    Arrange the endive leaves on a serving plate with the Blue cheese and onion in the center.
    Pour the dressing over all.
    Toss and serve at the table.
