Ingredients

4 or 5 medium beets
1/4 c. brown sugar
1/4 c. frozen orange juice
2 Tbsp. lemon juice
1 Tbsp. cornstarch
1/3 c. chopped pecans
2 Tbsp. butter
salt
black pepper
parsley
Preparation

Wash
and
trim
beets;
put
in
saucepan
with 1-inch boiling water; add salt to taste.
Bring to a boil;
cover and simmer for\t25 to 45 minutes or until beets are tender.
Drain and reserve
1/2
cup\tbeet liquid; peel and slice beets; set aside. In\tsaucepan, mix reserved liquid, brown sugar, orange juice, lemon
juice
and cornstarch; bring to a boil, cooking until thickened.\tAdd
beets and heat, stirring until glazed; keep warm.
In
a skillet, saute pecans in butter; add beets, salt, pepper and parsley.
