Grilled Orange Roughy With Tomato Basil Sauce - cooking recipe
Ingredients

3 Tbsp. olive oil
2 cloves garlic, minced
1 medium onion, minced fine
1/4 tsp. salt
1/4 tsp. fresh cracked pepper
4 Tbsp. chopped fresh basil or 2 Tbsp. dried basil
3 c. freshly chopped tomato
the juice of 1/2 lemon
3 (6 to 8 oz.) orange roughy fillets
2 Tbsp. olive oil
juice of 1/2 lemon
salt
pepper
2 Tbsp. dried basil
2 Tbsp. dried oregano
Preparation

For Grilling the Fish (for 4 people):
Brush fish with oil and lemon.
Sprinkle salt, pepper, dried basil and oregano over fish. Place fish on lightly oiled rack.
Grill over coals, 4 to 5 minutes per side, until done.
Remove fish.
Garnish with Tomato Basil Sauce and serve.
