Beef Standing Rib Roast - cooking recipe

Ingredients
    2 to 4 rib beef standing roast
    salt
    pepper
Preparation
    Have the retailer remove the backbone (for easier carving) and tie roast.
    Season meat with salt and pepper.
    Place roast, fat side up, on rack in open roasting pan.
    Insert roast meat thermometer so bulb is centered in the thickest part, making sure bulb does not rest in fat or on bone.
    Do not add water.
    Do not cover.
