Stuffed Crawfish Beignets - cooking recipe

Ingredients
    1/2 c. chopped onions
    1/2 c. chopped celery
    1/3 c. butter
    2 cloves garlic, minced
    salt and pepper to taste
    1 lb. crawfish tails, cooked
    1/4 c. grated Cheddar cheese
    1/4 c. grated Swiss cheese
    1 1/2 Tbsp. chopped green onions
    1 1/2 Tbsp. chopped parsley
    2 cans refrigerated biscuits
    vegetable oil (for frying)
Preparation
    Saute onion and celery in butter until tender.
    Add garlic, seasoning and crawfish tails.
    Simmer 8 to 10 minutes or until all liquid has evaporated.
    Set aside and cool completely.
    Add cheeses, green onions and parsley.
    Prepare biscuits.
