Microwave Rhubarb Sauce - cooking recipe
Ingredients

3 c. diced fresh or frozen rhubarb, thawed
1 c. water
1/2 c. sugar
1 (3 oz.) pkg. cook and serve vanilla pudding mix
Vanilla ice cream, optional
Preparation

In a microwave-safe bowl, combine the rhubarb, water and sugar.
Microwave, uncovered, on high for 8-10 minutes or until rhubarb is tender, stirring occasionally. Stir in pudding mix until blended; cook for 1-2 minutes or until thickened, stirring occasionally.
Serve over ice cream if desired.
Makes 6-9 servings.
