Grilled Scampi On A Stick - cooking recipe

Ingredients
    2 lb. large shrimp
    2 Tbsp. extra virgin olive oil
    2 Tbsp. sherry
    1 1/2 Tbsp. finely minced garlic
    1/4 tsp. paprika
    pinch of red pepper flakes
    salt and pepper to taste
    1 Tbsp. dried parsley flakes
    3 lemons, halved crosswise (for garnish)
Preparation
    Peel and devein shrimp, leaving the tails on.
    Rinse and pat dry.
    For marinade, combine oil, wine, garlic, paprika, pepper flakes and parsley in a large bowl.
    Add the shrimp and toss well. Refrigerate, covered, for 1 hour.
    Thread 4 to 6 shrimp crosswise, on each of 4 to 6 skewers.
    Grill 3 inches from hot coals, brushing with any remaining marinade.
    Cook 3 to 4 minutes per side or until cooked through.
    Be careful not to overcook or shrimp will become tough.
    Serve with lemons alongside.
