Low-Fat Chicken Soup - cooking recipe

Ingredients
    2 Tbsp. oil or margarine
    2 Tbsp. fresh parsley, chopped
    1/4 c. fresh celery, chopped
    3 Tbsp. onion, chopped
    1 1/2 c. cooked chicken (white meat only; turkey may be substituted)
Preparation
    Melt oil or margarine and saute seasoning for about 5 minutes. Add chicken and cook about 5 minutes more.
    Add salt and pepper to taste and 2 quarts of water to chicken mixture.
    Sweet basil and a few whole allspice may be added for flavor.
    Great with rice or noodles.
