Italian Codfish - cooking recipe

Ingredients
    1 1/2 to 2 lb. codfish
    2 Tbsp. olive oil
    2 small onions, chopped
    10 to 12 pitted olives, cut up
    1 stalk celery, cut up
    1/4 c. capers, washed
    1 can peeled tomatoes, crushed
    salt and pepper to taste
    4 to 6 potatoes, peeled and quartered
Preparation
    Soak codfish overnight in cold water; changing water several times.
    Saute onions, olives, celery and capers in olive oil. Stir occasionally.
    Add crushed tomatoes, salt and pepper.
    Simmer about 5 minutes.
    Add codfish.
    Add enough water to cover fish. Simmer 20 to 25 minutes.
