Sedalia'S Louisiana Gumbo(Fourth Generation Recipe) - cooking recipe

Ingredients
    1 stewing chicken
    6 medium crabs
    5 lb. shrimp
    1 qt. oysters (optional)
    2 lb. hot sausage, sliced
    1 lb. ham, sliced
    3 large onions, chopped
    2 cloves garlic, minced
    1 green pepper, chopped
    1 1/2 c. chopped celery
    1 lb. okra, sliced
    2 bay leaves
    1 tsp. basil
    1 tsp. thyme
    1 tsp. oregano
    cayenne pepper to taste
    1 (16 oz.) jar prepared spaghetti sauce
    2 qt. water
    1 qt. chicken stock
    2 celery stalks with leaves
    1/4 c. all-purpose flour
    6 Tbsp. margarine
Preparation
    You will need 1 large heavy pot (approximately 20 quarts).
