Ingredients

1 ox kidney or 8 mutton kidneys
salt and pepper
flour
1 lb. ground beef
1 c. chopped onion
3/4 c. green pepper
1 clove garlic, minced
1 1/2 tsp. salt
1/4 tsp. pepper
1 tsp. chili powder
5 c. sliced zucchini or summer squash
2 large tomatoes, chopped
1 1/4 c. (3 ears) corn
2 Tbsp. pimientos, chopped
1/4 c. fresh parsley, chopped
Preparation

Saute beef, onion, green pepper and garlic in a skillet until browned.
Remove corn from ears and add with remaining ingredients.
Cover and simmer for 10 to 15 minutes or until vegetables are tender.
Serves 6.
