Zucchini Casserole - cooking recipe
Ingredients

6 c. zucchini, sliced thin
1/2 c. onion
1 c. grated carrots
1 (6 oz.) box Stove Top stuffing
1/2 c. margarine
1 can cream of chicken soup
1 c. sour cream
Preparation

Parboil zucchini and onion for 5 minutes and drain.
Mix sour cream and cream of chicken soup and carrots together, then fold in zucchini.
In small bowl, mix stuffing and melted margarine.
In casserole, place 1/2 stuffing on bottom, then all of the zucchini; mix and place remaining stuffing on top.
Cover and bake at 350\u00b0 for 30 minutes.
