Irish Potato Candy - cooking recipe

Ingredients
    small potato
    1 to 2 boxes confectioners sugar
    peanut butter
    vanilla extract
Preparation
    Cut potato in half.
    Peel, dice and boil until tender; drain. (Only use a piece of potato about the size of an egg.)
    Mash potato with fork; add vanilla and slowly add confectioners sugar, mixing well by hand.
    Keep adding sugar until have a stiff dough.
    Roll out on wax paper sprinkled with confectioners sugar in a rectangular oval.
    Spread with peanut butter.
    Roll into a log and slice.
