Crunchy Munchy Muffins - cooking recipe

Ingredients
    1 1/4 c. whole wheat flour
    1/2 tsp. baking powder
    1/2 tsp. salt
    1/3 c. honey
    1/2 c. chopped nuts
    1 c. shredded carrots
    grated peel and juice of 1 orange (1/3 c. juice)
    1 tsp. cinnamon
    1/2 tsp. baking soda
    2 eggs
    1/2 c. raisins
    1/4 c. oil
Preparation
    In large bowl, combine flour, cinnamon, baking powder, baking soda and salt.
    In small bowl, beat eggs, orange peel and juice, honey and oil until well blended.
    Add egg mixture to flour mixture, stirring just until dry ingredients are moistened.
    Stir in carrots, nuts and raisins.
    Spoon batter into baking cups, filling to top.
    Bake 20 to 25 minutes in a 375\u00b0 oven.
