Surprise Pie - cooking recipe

Ingredients
    1 large container Cool Whip
    1 can Eagle Brand sweetened milk (not condensed)
    1 grated whole lemon rind
    1/4 c. lemon juice
    1 small can crushed pineapple juice plus pineapple
    1 graham crust
    toasted crushed coconut for top (optional)
Preparation
    Mix Cool Whip, milk, pineapple and lemon rind.
    Last mix in lemon juice (it makes it all stick together).
    Place in crust and chill for 1 hour.
    Top with toasted coconut and serve.
