Zucchini Casserole - cooking recipe

Ingredients
    4 c. chunk zucchini
    1/2 c. chopped onion
    1 can cream of chicken soup
    1/2 c. sour cream
    3/4 c. shredded carrots
    2 1/2 c. Stove Top stuffing, divided (chicken flavored)
Preparation
    Cook zucchini in salted water until tender.
    Melt 4 tablespoons margarine and saute carrots and onion in it.
    Remove from heat; stir in 1 1/2 cups of stuffing mix, soup and sour cream.
    Fold in zucchini and turn into 1 1/2-quart casserole dish. Melt 2 tablespoons margarine and toss remaining stuffing mix in it.
    Sprinkle over top of casserole.
    Put grated cheese on top if desired.
    Bake 30 to 40 minutes at 350\u00b0.
