Boil-Bake Country Ham - cooking recipe

Ingredients
    1 country ham
    water to cover
    1 c. vinegar
    1 c. dark brown sugar
    whole cloves
    1/4 c. dry mustard
    1/2 c. packed dark brown sugar
    2 Tbsp. cornmeal
Preparation
    Three
    days
    before
    serving, in large roaster or stock pot, soak ham overnight in enough cold water to cover.
    In the morning remove ham, place in sink and scrub with a brush under running water
    until
    it
    has
    been
    cleaned
    of any cleaning debris. Wash
    roaster,
    place
    ham
    in
    it
    and cover it with water.
    Add vinegar and 1 cup of brown sugar to ham water and bring
    to
    boil, immediately reducing heat to low.
    Simmer 20 minutes
    per
    pound for older ham, 15 to 18 minutes for quick-aged
    ham,
    or
    until the small bone in hock can be pulled out with the fingers.
    Let cool in cooking water overnight.
