Zucchini Patties - cooking recipe

Ingredients
    1 1/2 c. grated unpeeled zucchini
    2 Tbsp. grated green onion or 1/2 c. regular onion, shredded
    1/4 c. Parmesan cheese, shredded
    1/4 c. flour
    2 eggs
    2 Tbsp. mayonnaise
    1/4 tsp. oregano
    salt and pepper to taste
Preparation
    Mix together 1 1/2 cups grated unpeeled zucchini (dry between paper towels).
    Add onion, cheese, flour, eggs, mayonnaise and spices.
    Melt 1 teaspoon butter (or coat with oil) in a 10-inch skillet.
    Spoon 2 heaping tablespoons of batter for each patty. Flatten with spatula.
    Cook until brown on both sides.
    Serve plain or with tomato sauce or grated cheese.
