Chicken And Okra Gumbo - cooking recipe

Ingredients
    1 large onion, chopped
    2 c. sliced okra (inch length), fresh or frozen
    4 Tbsp. bacon drippings
    1 (2 1/2 lb.) chicken, cut up or you may use chicken breast of the same amount, cut up
    salt and pepper
    1/2 tsp. garlic powder
    2 Tbsp. chopped green pepper
    2 cans Swanson chicken broth plus water to make 2 qt. liquid
    gumbo file (optional)
Preparation
    Saute onion and okra in the drippings about 30 minutes, stirring often.
    Season chicken
    with
    salt
    and pepper, brown chicken in additional oil or drippings in heavy skillet on low flame.
    Pour off excess oil.
    Add
    the okra, onion mixture and gradually stir in water.
    Season
    with gumbo filet if desired. Cook over low heat until
    chicken
    is tender (about 45 minutes or more).
    Remove bones
    from chicken, if desired.
    Serve over hot cooked rice.
    Yields 8 to 10 servings.
