Sweet Potato Pie - cooking recipe

Ingredients
    3 to 4 large sweet potatoes
    1/2 c. soft butter
    2 c. sugar
    4 eggs
    1/2 tsp. nutmeg
    1/2 tsp. salt
    1 can evaporated milk
    2 (9-inch) deep dish pie crusts
Preparation
    Cook sweet potatoes in boiling water until fork easily pierces potatoes.
    Cool slightly; remove skins and place into large mixing bowl.
    Mix with mixer until smooth.
    Stir in butter and sugar. Beat in eggs one at a time.
    Mix in nutmeg, salt and evaporated milk.
    Pour into unbaked pie shells.
    Place on cookie sheet and bake at 425\u00b0 for 20 minutes.
    Lower heat to 325\u00b0 and bake 30 to 45 minutes longer or until knife inserted in comes out clean.
