Chicken Vicenza - cooking recipe

Ingredients
    1 (3 lb.) broil/fryer, quartered
    1/2 c. olive oil
    1 c. artichoke hearts (optional)
    3/4 c. cooking sherry (optional)
    1 clove garlic, crushed
    1 (1 lb. 13 oz.) can whole tomatoes
    1/2 tsp. oregano
    salt and pepper to taste
Preparation
    Brown chicken in oil.
    Drain and remove to platter (keep warm in oven).
    Saute onions in oil until transparent.
    Add tomatoes and simmer, stirring constantly for 5 minutes.
    Return chicken to sauce, add other ingredients except sherry.
    Simmer, covered, for 25 minutes (turn chicken occasionally).
    Stir in sherry and cook 5 minutes more.
    (Is good served with rice.)
