Cucumber Bites - cooking recipe

Ingredients
    1 large cucumber, peeled if desired
    1 c. plain low-fat yogurt
    1/2 c. lite sour cream
    1/4 c. shredded carrots
    3 Tbsp. finely chopped radishes
    1 Tbsp. finely chopped parsley
    salt and pepper to taste
Preparation
    Cut cucumber into 1/2-inch slices.
    Hollow out about 1/2 inch. Chill.
    Chop pulp, combine with remaining ingredients.
    Fill with mixture.
    Serve remainder as dip.
