Orange Coffee Cake - cooking recipe

2 1/2 c. sifted cake flour
3 tsp. baking powder
1/2 tsp. salt
1/3 c. margarine
2/3 c. sugar
2 heaping Tbsp. grated orange rind (2 medium oranges)
1 c. orange juice
4 large egg whites
Preparation

On waxed paper, sift together flour, baking powder and salt. Cream margarine, sugar and orange rind.
Add flour mixture in 4 additions, alternating with orange juice, beating only until smooth.
Beat egg whites until they hold stiff peaks and fold into other mixture.
Pour into a 9-inch or 12-inch tube pan that has been sprayed with cooking spray.
Bake at 350\u00b0 for 50 to 60 minutes.
Cool on wire rack for 10 minutes.
Turn out on a wire rack to cool.
