Liver And Rice Casserole - cooking recipe

Ingredients
    1/2 c. uncooked regular rice
    2 3/4 c. boiling water, divided
    1 medium onion, chopped
    3 Tbsp. melted butter
    1 lb. beef liver, cubed
    2 Tbsp. salad oil
    1 (16 oz.) can stewed tomatoes
    salt and pepper to taste
Preparation
    Cook rice in 2 cups boiling water for 5 minutes; drain and rinse with cold water.
    Brown onion in butter and place in a 2-quart casserole.
    Cover with rice, tomatoes and 3/4 cup water. Season to taste with salt and pepper.
    Bake at 400\u00b0 for 1 hour. Makes 6 servings.
